It was Glenda R. Barretto’s commitment to give wider recognition and appreciation to Philippine cuisine that gave birth to Via Mare Publications. In 1997, we published the ASEAN Seafood Cookbook Philippine Edition, which was part of the Asean Fisheries Federation’s Best Asean Cooking promotions. That the Asean Fisheries Federation appointed Via Mare as its Asean Seafood Restaurant in Manila comes as no surprise considering its years of experience and creativity with seafood dishes. In September of the same year, Via Mare published Flavors of the Philippines: A Culinary Guide to the Best of the Islands. The cookbook brought forth to the world a body of cooking styles and techniques collectively known as Philippine cuisine. With these two books catching the world’s attention, it was no surprise that Arden Imprints of London commissioned Via Mare to come up with Via Mare: A Seafood Cookbook which presented seafood dishes gathered from Glenda R. Barretto’s extensive world travel and meeting with local cooks both professional and domestic.
